- 1 box Red Lobster Cheddar Bay Biscuits (don’t lose the packet!)
- 4-5 cups cooked, shredded chicken
- 1 can cream of chicken soup
- 2 cups chicken broth
- 1 cup cheddar cheese
- 1 bag frozen mixed vegetables
- 2 cups milk
- 1 tsp salt
- 1 tsp pepper
- 1 tsp parsley
Step-by-Step Instructions:
- Preheat Your Oven: Set your oven to 400°F (200°C).
- Prepare the Baking Dish: Spray your 9×13 baking dish with non-stick cooking spray.
- Melt the Butter: Pour the melted butter into the bottom of the dish.
- Add the Chicken: Place your shredded chicken on top of the butter, and season with salt, pepper, and parsley.
- Layer the Vegetables: Top the chicken with the bag of frozen vegetables.
- Mix the Biscuit Topping: In a bowl, combine the biscuit mix, cheese, and milk. Pour this mixture over the contents in the baking dish. DO NOT MIX!
- Prepare the Soup Mixture: Combine the seasoning packet, chicken broth, and cream of chicken soup. Pour this mixture into the baking dish. Again, DO NOT MIX!
- Bake: Place the dish in the oven for 35-40 minutes.
- Let It Rest: Remove from the oven and allow it to sit for 15 minutes before serving.
What Chicken Should I Use?
You can use rotisserie chicken or cook chicken breasts in your instant pot.
If you’re using an instant pot, spray it, add 1 cup of water, place your frozen chicken breasts in, season, and set it on high pressure for 25 minutes.
Let it naturally release for 10 minutes, then release the pressure. Shred the chicken with a hand mixer.
